Testing Oil Content in Steam from Hot Pot Cooking

MULTIPLE TESTING
CANADA / USA accredited Contract laboratory needed for testing oil content in steam generated from table-top induction cooktops in a hot pot restaurant chain. This steam gets sucked out by under-table exhaust ducts in dining areas, which must comply with NFPA 96 standards (Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations) per different municipality regulations.
We seek a quotation and an understanding of the procedural steps required to test the oil content in the steam generated during the cooking process. This will help us demonstrate that our under-table exhaust system does not need to meet Type 1 duct requirements (for kitchen grease ducts).
This proof is intended for use in North America (the United States and Canada).
